In a large stockpot, combine the chicken frame (bones, carcass, and any remaining meat) with enough water to fully submerge the chicken. Bring to a gentle simmer over medium heat. Cover and simmer for 90 minutes, allowing the broth to develop a rich and savory flavor.

Remove the chicken frame and bay leaves from the pot. Discard the bones and bay leaves. If desired, shred any remaining chicken meat from the carcass and return it to the pot.

Add the diced potatoes, chopped carrots, diced onion, green beans, and peppercorns to the pot. Add additional water, if needed, to just cover the vegetables. Cover and simmer gently until the vegetables are tender, approximately 20-25 minutes.

Season the soup generously with salt and freshly ground black pepper to taste. Adjust seasoning as needed.

For a richer flavor, consider roasting the chicken frame in the oven at 400°F (200°C) for 20 minutes before adding it to the stockpot.
Feel free to customize the vegetables based on your preferences and what you have on hand. Celery, parsnips, or turnips would also be delicious additions.
If you prefer a smoother soup, you can use an immersion blender to partially or fully blend the soup after the vegetables are cooked.
A squeeze of fresh lemon juice at the end brightens the flavors beautifully.
