Then, press the chicken into the panko bread crumbs until completely coated. Place the breaded chicken on a plate, ensuring the pieces are not stacked. Repeat with the remaining chicken. (20 minutes)

Heat vegetable oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C). Carefully lower the chicken into the hot oil in batches, ensuring not to overcrowd the fryer. Fry until golden brown and cooked through, about 5 minutes per batch. (25 minutes)

Transfer the fried chicken to paper towels to drain excess oil. Repeat with the remaining chicken. (5 minutes)

In a separate bowl, whisk together Japanese mayonnaise, mirin, 2 tablespoons honey, Dijon mustard, and 1 tablespoon soy sauce until well combined. (5 minutes)
