For a richer flavor, consider using brioche or challah bread. Feel free to experiment with different cheeses. Gruyere, Monterey Jack, or a blend of cheeses would also work well. Add some chopped bell peppers or mushrooms to the sausage mixture for added vegetables. The casserole can be assembled ahead of time and stored in the refrigerator overnight. Add about 10-15 minutes to the baking time if baking from cold. If the top of the casserole is browning too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
