Follow The Directions

Bring a large pot of lightly salted water to a boil. (5 minutes)

Add the rigatoni pasta and cook according to package directions, about 8-10 minutes, until al dente. Drain well and transfer to a large bowl. (10 minutes)

Add the chopped red and green bell peppers, halved cherry tomatoes, minced garlic, salt, pepper, chopped fresh basil, fresh parsley, dried oregano, and diced Asiago cheese to the bowl. (5 minutes)

Stir in the grated Parmesan cheese. (1 minute)

Refrigerate for at least 20 minutes to allow the flavors to meld. Add more olive oil as needed before serving. (20 minutes)

For an extra layer of flavor, consider grilling the bell peppers before chopping. This imparts a smoky sweetness to the salad.
Fresh mozzarella balls can be substituted for or added to the Asiago cheese for a creamier texture.
If you don't have fresh basil on hand, you can use 1 tablespoon of dried basil, but fresh is highly recommended.
This salad is best served cold, as the flavors intensify as it chills.
