In a large bowl, whisk together the ground hazelnuts, flour, and confectioners' sugar until well combined. (5 minutes)

Add the softened butter, egg yolks, and salt to the dry ingredients. Mix with your hands or a stand mixer until a smooth dough forms. (5 minutes)

Gently form the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 3 hours, or preferably overnight. (3 hours)

Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper. (10 minutes)

Remove the dough from the refrigerator and let it sit for a few minutes to soften slightly. On a lightly floured surface, roll the dough into 48 small balls, about 2 teaspoons each. (20 minutes)

Arrange the balls on the prepared baking sheets, spacing them about 2 inches apart. (5 minutes)

Bake in the preheated oven for 18-20 minutes, or until the cookies are just set and lightly golden brown around the edges. (20 minutes)

Remove the baking sheets from the oven and let the cookies cool completely on a wire rack. (30 minutes)

Once the cookies are completely cool, spread or pipe about 1 teaspoon of Nutella® onto the flat side of half of the cookies. Gently sandwich with the remaining cookies. (20 minutes)

For a richer flavor, toast the hazelnuts lightly before grinding. Spread them on a baking sheet and bake at 350°F (175°C) for 8-10 minutes, or until fragrant.
Ensure the butter is properly softened, but not melted, for the best dough consistency.
If the dough is too sticky to handle, add a tablespoon of flour at a time until it becomes manageable.
The baking time may vary depending on your oven, so keep a close eye on the cookies and adjust accordingly.
Store the assembled cookies in an airtight container at room temperature for up to 3 days.
