Then, incorporate the chopped onion, sliced celery, minced garlic, fresh thyme leaves, and ground black pepper. Continue to sauté for another 3 minutes, allowing the aromatics to meld.

Deactivate the 'Sauté' mode. Introduce the drained sauerkraut, cubed red potatoes, chicken broth, and hard apple cider into the pot. Secure the lid, ensuring it's properly locked. Select 'High Pressure' according to the manufacturer's guidelines for your Instant Pot; set the timer for 8 minutes. Allow approximately 10 minutes for the pressure to build within the pot.

Once the cooking cycle is complete, carefully release the pressure using the quick-release method as instructed by the manufacturer, which should take around 5 minutes. Exercise caution during this step.

For a richer depth of flavor, consider using a smoked paprika sausage.
If you prefer a creamier soup, stir in a dollop of sour cream or Greek yogurt before serving.
A splash of apple cider vinegar at the end can brighten the flavors even further.
Serve hot with a side of crusty bread or rye bread for dipping.
