For extra fluffy pancakes, try separating the egg and whipping the egg white until stiff peaks form. Gently fold the whipped egg white into the batter just before cooking.
If your batter seems too thick, add milk 1 tablespoon at a time until you reach your desired consistency.
To keep the pancakes warm while you cook the remaining batter, place them on a baking sheet in a preheated 200°F (95°C) oven.
