Follow The Directions

01

Step

In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat. (1 minute)

02

Step

Sprinkle in the flour and whisk constantly until the mixture forms a smooth, thick paste (a roux) and all the flour is fully incorporated. (3-4 minutes)

03

Step

Slowly pour in the cold milk, whisking continuously to prevent lumps from forming. Once the milk is fully incorporated, bring the mixture to a simmer, stirring occasionally, until it slightly thickens. (5 minutes)

04

Step

Stir in the paprika, ground chipotle pepper, ancho chile powder, cayenne pepper, and salt. (1 minute)

05

Step

Reduce the heat to low. Add the shredded sharp Cheddar, Monterey Jack, and Muenster cheeses, a handful at a time, stirring constantly until each addition is completely melted and the sauce is smooth. (5-7 minutes)

06

Step

Taste and adjust seasoning with salt as needed. Serve immediately or keep warm in a slow cooker on the 'warm' setting.

For an extra layer of flavor, try adding a tablespoon of pickled jalapeño juice to the sauce.
If the sauce becomes too thick, stir in a little extra milk to reach the desired consistency.
To prevent the cheese from clumping, make sure to add it gradually and stir constantly over low heat.
This sauce can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, stirring frequently, until smooth.

The sauce was a little thick at first, but a splash of milk fixed it perfectly.
