Dip each cheese stick half into the beaten egg, ensuring it's fully coated. Then, dredge the egg-coated stick in the bread crumbs, pressing gently to ensure an even and complete coating. Place the breaded cheese sticks onto the prepared baking sheet. Allow the sticks to rest at room temperature for 5 minutes to help the coating set. Repeat the dipping and breading process for a thicker, more protective crust. Transfer the breaded cheese sticks to the freezer and freeze for a minimum of 2 hours to ensure they hold their shape during frying. (30 minutes)
