Step

Place the beef in the slow cooker. In a small bowl, combine the flour, salt, and pepper. Sprinkle the mixture over the beef and toss to coat evenly. (5 minutes)

Add the butternut squash, carrots, potatoes, beef broth, onion, celery, garlic, bay leaf, paprika, and Worcestershire sauce to the slow cooker. (10 minutes)

Cover the slow cooker and cook on Low for 10 to 12 hours, or on High for 4 to 6 hours. (See notes for optimal timing).

Stir in the escarole. Cover and cook until the escarole is tender, approximately 15 to 20 minutes.

For richer flavor, sear the beef cubes in a skillet with a little olive oil before adding them to the slow cooker.
Adjust the amount of garlic to your preference. Feel free to add other vegetables like parsnips or turnips for added depth of flavor.
If you are using the high setting, check the stew periodically to make sure the liquid hasn't reduced too much. Add more broth if needed.
