Follow The Directions

01

Step
8 hrs

Soak the Beans: In a large bowl, cover the dried great northern beans with several inches of cool water. Let them soak for at least 8 hours, or preferably overnight. This rehydration step is crucial for achieving optimal tenderness. (8-12 hours)

02

Step
10 mins

Combine and Simmer: Drain and rinse the soaked beans. Transfer them to a large stockpot. Add the diced ham, ham bone, tomato sauce, chopped onions, sliced celery, bouquet garni, dried parsley, baking soda, salt, and pepper. Cover the ingredients with water, ensuring everything is submerged by at least an inch. Bring the mixture to a boil over medium-high heat.

03

Step
2 hrs

Slow and Steady: Once boiling, reduce the heat to low, cover the pot, and let the soup simmer gently for 2 hours. This slow cooking process allows the flavors to meld together beautifully, creating a richer, more complex taste.

04

Step
20 mins

Add Vegetables: Add the cubed potatoes and sliced carrots to the simmering soup. Continue to simmer until the potatoes and carrots are tender, about 20 minutes. Check the seasoning and add more salt and pepper to taste, if necessary.

05

Step
1 mins

Serve: Before serving, remove the ham bone and bouquet garni. Ladle the soup into bowls and enjoy the satisfying warmth and flavor.

For an even richer flavor, consider browning the ham bone in a skillet before adding it to the soup.
A ham hock can be substituted for the ham bone.
If you don't have a bouquet garni, you can simply tie together a few sprigs of fresh thyme, parsley, and a bay leaf with kitchen twine.
Adjust the amount of water to achieve your desired soup consistency. For a thicker soup, use less water; for a thinner soup, use more.
This soup is even better the next day, as the flavors have more time to meld together.
