Follow The Directions

01

Step

Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish. (5 minutes)

02

Step

In a large bowl, gently combine the diced green bell pepper, red bell pepper, onion, corn, peas, and green beans. Season generously with sea salt and freshly ground black pepper. (10 minutes)

03

Step

In a separate bowl, whisk together the cottage cheese and egg whites until smooth and well combined. Gently fold this mixture into the vegetable mixture. (5 minutes)

04

Step

Pour the combined mixture into the prepared baking dish, spreading it evenly. Sprinkle the diced ham and chopped green onions evenly over the top. Finish by generously topping with the shredded mozzarella cheese. (5 minutes)

05

Step

Bake in the preheated oven until the center is set and the top is golden brown, approximately 40 to 60 minutes. To test for doneness, insert a knife into the center; it should come out clean. (50 minutes)

For an extra layer of flavor, consider sautéing the diced vegetables in a tablespoon of olive oil until slightly softened before adding them to the quiche mixture.
Feel free to substitute other vegetables based on your preferences and what's in season. Spinach, mushrooms, or zucchini would be excellent additions.
Allow the quiche to cool slightly before slicing and serving. This will help it hold its shape better.
Store leftover quiche in the refrigerator for up to 3 days.
