Follow The Directions

01

Step
12 mins

Cook the Pasta: Bring a large pot of lightly salted water to a boil. Add the Halloween-shaped and wagon wheel-shaped pasta and cook until al dente, about 12 minutes. Drain well and transfer to a large bowl.

02

Step
20 mins

Prepare the Pumpkin: Place the chopped pumpkin in a large pot and cover with salted water. Bring to a boil, then reduce heat and simmer until the pumpkin is tender, about 20 minutes. Drain the pumpkin thoroughly and return it to the pot. Add nutmeg, allspice, cinnamon, 1 teaspoon of minced garlic, chopped onion, chili powder, and 3 tablespoons of olive oil. Stir to coat the pumpkin evenly with the spices.

03

Step
5 mins

Combine and Serve: Add the sliced black olives and drained garbanzo beans to the cooked pasta. In a small bowl, mix together 1/4 cup of chopped garlic, Parmesan cheese, 1/4 cup of olive oil, and dried oregano. Pour this mixture over the pasta and toss to coat. Top with the spiced pumpkin mixture. Serve immediately and enjoy the festive flavors of Halloween!

For a richer flavor, try roasting the pumpkin instead of boiling it. Toss the pumpkin with olive oil, salt, and pepper, then roast at 400°F (200°C) until tender and slightly caramelized.
If you can't find Halloween-shaped pasta, use any other fun shapes, such as bow ties or shells.
Adjust the amount of chili powder to your taste. For a milder dish, use less chili powder or omit it altogether.

I roasted the pumpkin as suggested, and it added a wonderful depth of flavor to the dish. I'll definitely be making this again!
