For an extra layer of flavor, marinate the swordfish steaks in a mixture of lime juice, ginger, and garlic for 30 minutes before grilling. If you don't have kumquats, you can substitute with mandarin orange segments. Make sure your grill is hot before adding the swordfish to get a nice sear. Be careful not to overcook the swordfish, as it can become dry. Aim for an internal temperature of 145°F (63°C).
