Turn the dough out onto the prepared work surface and gently roll it to a ¼-inch thickness. (5 minutes) Use cookie cutters or a knife to cut out desired shapes (approximately 2-inch cookies or bars). Gather any scraps, reroll, and cut out more cookies until all the dough is used. (10 minutes)

Carefully transfer the cut cookies to the prepared baking sheet. (5 minutes) Lightly sprinkle each cookie with granulated sugar. (3 minutes)

Bake in the preheated oven until the edges are firm and the cookies are just beginning to turn golden, about 15-18 minutes. (15-18 minutes)

Remove from the oven and let the cookies cool completely on the baking sheet before transferring them to a wire rack. (30 minutes)

For the most intense green tea flavor, use culinary-grade matcha powder.
Chilling the cut cookies in the refrigerator for 10 minutes before baking will help them hold their shape.
Store the cooled cookies in an airtight container at room temperature for up to 5 days. The flavor intensifies after a day or two!
