Place the turkey sausages in the buns. Evenly distribute the Greek-style veggie mixture over the sausages, sprinkle with some feta cheese, and serve. (5 minutes)

For an extra layer of flavor, try grilling the buns lightly before adding the sausage and toppings.
Feel free to adjust the amount of feta cheese to your liking. A sprinkle of fresh dill or mint would also complement the flavors nicely.
If you don't have an outdoor grill, you can cook the sausages in a skillet over medium heat.
