Toast the Pine Nuts: In a dry skillet over medium heat, toast the pine nuts until golden brown and fragrant, stirring frequently to prevent burning. (Approximately 3-5 minutes). Remove from skillet and set aside to cool.

Cook the Quinoa: In a medium saucepan, bring water and quinoa to a boil. Reduce heat to low, cover, and simmer until quinoa is tender and water is absorbed. (Approximately 15 minutes). Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and allow to cool completely.

Combine Salad Ingredients: In a large bowl, combine the cooled quinoa, spinach, kidney beans, grape tomatoes, Kalamata olives, feta cheese, and red onion.

Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, and oregano. Season with salt and pepper to taste.

Dress the Salad: Pour the dressing over the quinoa mixture and toss gently to combine. Garnish with toasted pine nuts. Serve immediately or chill for later.

For an extra layer of flavor, try grilling the halloumi cheese and adding to the salad.
Quinoa can be cooked a day ahead. Ensure it's cooled completely before adding to the salad to prevent the spinach from wilting.
Feel free to add other vegetables such as bell peppers or cucumbers to customize your salad.
