Follow The Directions

01

Step

In a large pot over medium-high heat, cook and stir the ground turkey, Italian sausage (removed from casings), green bell pepper, onion, and celery until the meat is browned and the vegetables are tender. (Approximately 10-12 minutes)

02

Step

Stir in the stewed tomatoes, cubed zucchini, chicken broth, Italian seasoning, sea salt, dried tarragon, garlic powder, and black pepper. Bring the mixture to a boil, then reduce the heat to low.

03

Step

Simmer gently until the flavors meld and the zucchini is tender, about 1 hour.

04

Step

Ladle the soup into bowls and garnish with grated Parmesan cheese to taste. Serve hot.

For a richer flavor, consider browning the ground turkey and sausage in a little olive oil before adding the vegetables.
Feel free to adjust the amount of Parmesan cheese to your liking. A dollop of sour cream or a swirl of pesto would also be delicious additions.
If you prefer a smoother soup, you can use an immersion blender to partially or fully puree it after simmering.
