For a smoother jam, ensure all stems and blossom ends are completely removed before milling the gooseberries. Adjust the amount of sugar slightly based on the tartness of your gooseberries. Taste the mixture before boiling and add more sugar if needed. If you don't have a food mill, you can carefully pulse the gooseberries in a food processor, but be careful not to over-process them into a puree.
