In a large skillet, melt the butter over medium heat. Add the sesame oil, white parts of the green onion, and minced garlic. Cook, stirring frequently, until fragrant and the garlic is softened, about 1 minute.

Add the shrimp to the skillet and cook, stirring occasionally, until they turn pink and opaque, about 3-5 minutes.

Stir in the gochujang, soy sauce, and honey. Toss to coat the shrimp evenly with the sauce. Cook for another minute, allowing the sauce to thicken slightly.

In a small bowl, combine the julienned cucumber, carrot, green parts of the green onion, and toasted sesame seeds. Mix well.

To assemble the lettuce wraps, spoon the gochujang shrimp mixture into the butter lettuce leaves. Top with the cucumber and carrot mixture.

Serve immediately with lemon wedges for squeezing over the wraps.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the shrimp mixture.
If you don't have butter lettuce, romaine or iceberg lettuce will also work.
The shrimp mixture can be prepared ahead of time and reheated just before serving. Keep the cucumber mixture separate until ready to assemble.
Consider adding a dollop of mayonnaise to the wraps for some extra creaminess.
