Follow The Directions

01

Step

Preheat your waffle iron according to the manufacturer's instructions. Lightly coat with cooking spray. (5 minutes)

02

Step

In a large mixing bowl, whisk together the sorghum flour, tapioca starch, sugar, baking powder, xanthan gum, and salt until well combined. (2 minutes)

03

Step

In a separate large, clean, and dry glass or metal bowl, beat the chicken and duck egg whites with an electric mixer until soft peaks form. The peaks should gently curl when the beaters are lifted. (5 minutes)

04

Step

In another large bowl, whisk together the egg yolks, almond milk, applesauce, and vanilla extract until smooth. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the beaten egg whites until the batter is light and airy. (5 minutes)

05

Step

Pour approximately 2/3 cup of batter onto the preheated waffle iron for each waffle, or according to your waffle iron's instructions. Cook until golden brown and crispy. (3-5 minutes per waffle)

For an extra layer of flavor, consider adding 1-2 teaspoons of cinnamon to the dry ingredients.
Experiment with different toppings! Apple butter, Greek yogurt, fresh berries, or even a smear of peanut butter are all delightful options.
Separating the eggs is highly recommended for achieving the lightest, fluffiest waffles. However, if you're short on time, you can skip this step, although the texture may be slightly denser.
