Pat the whole chicken thoroughly dry with paper towels to ensure crispy skin. Make 4 deep slits on each side of the chicken and 1 deep slit in each leg using a sharp knife. (10 minutes)

Press 1 garlic half deep into each slit, evenly distributing the garlic's flavor. Place the remaining 2 garlic halves inside the chicken's cavity. (7 minutes)

Season the cavity generously with freshly cracked salt and black pepper to taste. (2 minutes)

Generously season the outside of the chicken with 1 tablespoon of fresh rosemary, salt, and black pepper. (3 minutes)

Carefully place the seasoned chicken, breast-side up, into the slow cooker on top of the potatoes and onions. Sprinkle the remaining 1 tablespoon of rosemary over the chicken. Season with additional salt and pepper to taste. (3 minutes)

Cover the slow cooker securely. Cook on Low heat for 8 to 10 hours, or until an instant-read thermometer inserted into the thickest part of the chicken breast, near but not touching the bone, reaches at least 165 degrees F (74 degrees C). (8-10 hours)

Once cooked, carefully remove the chicken from the slow cooker. Let it rest for 10-15 minutes before carving. (10-15 minutes)
