For an even richer flavor, use roasted garlic instead of fresh. The spread can be stored in an airtight container in the refrigerator for up to a week. Try adding a pinch of red pepper flakes for a touch of heat.
Transform ordinary tomatoes into a symphony of flavor with this slow-roasted spread. The concentrated sweetness of Roma tomatoes, infused with garlic and oregano, makes a versatile condiment perfect for sandwiches, appetizers, or simply enjoyed with crusty bread.
Preheat oven to 250 degrees F (120 degrees C). (5 minutes)
Arrange tomatoes, cut-side up, in a shallow baking dish. Drizzle with olive oil, then sprinkle evenly with crushed garlic, dried oregano, sugar, and salt. (10 minutes)
Bake in the preheated oven for 1 hour.
Turn tomatoes over and continue baking until deeply caramelized and very soft, approximately 1 to 1 1/2 hours. (5 minutes)
Remove from the oven and allow to cool to room temperature, about 1 hour.
Transfer the tomato mixture to a blender or food processor. Purée until smooth and creamy. (5 minutes)
