For a deeper flavor, consider adding a tablespoon of Dijon mustard to the marinade. Use a reliable meat thermometer for accurate temperature readings. Insert the thermometer into the thickest part of the roast, away from any bones. If the top of the roast starts to brown too quickly, tent it loosely with foil during the last part of the roasting process. Save the pan drippings to make a delicious au jus or gravy to serve alongside the prime rib.
