Preheat the oven to 375 degrees F (190 degrees C). (5 minutes)

Place the garlic head on a sheet of aluminum foil. Drizzle with 1 teaspoon of olive oil and season generously with salt and pepper. Wrap the foil tightly around the garlic to enclose it completely. Place on a baking sheet. (5 minutes)

Bake in the preheated oven until the garlic is roasted and very tender, about 40 minutes. Remove from the oven and carefully unwrap the foil. Set aside to cool slightly until it's easy to handle, approximately 10 to 20 minutes. Squeeze the roasted garlic cloves out of their peels. (60 minutes)

In a food processor or high-powered blender, combine the roasted garlic cloves, drained chickpeas, tahini, Parmesan cheese, 3 tablespoons of extra-virgin olive oil, lemon juice, 1/2 teaspoon of black pepper, cumin, and salt. Process until completely smooth and creamy, scraping down the sides as needed. (10 minutes)

For an even smoother hummus, peel the skins off the chickpeas before blending.
Adjust the amount of lemon juice, salt, and pepper to your personal taste.
Serve with warm pita bread, fresh vegetables, or crackers for dipping.
This hummus can be stored in an airtight container in the refrigerator for up to 5 days.
