In a very large bowl, or the bowl of a stand mixer, beat together the eggs, granulated sugar, brown sugar, corn syrup, softened butter, vanilla extract, and peanut butter until smooth and well combined. (5 minutes)

Gradually stir in the rolled oats until evenly distributed. (3 minutes)

Fold in the chocolate chips and candy-coated chocolate pieces. (2 minutes)

Drop the dough by generous tablespoonfuls onto ungreased baking sheets, leaving some space between each cookie. (10 minutes)

For best results, use a good quality peanut butter and fresh rolled oats.
If you prefer a slightly cakier cookie, you can add 1/2 cup of all-purpose flour to the dough, but it is not necessary.
Feel free to experiment with different types of chocolate chips or candies. White chocolate chips or peanut butter chips would also be delicious.
These cookies freeze well. Allow them to cool completely, then store them in an airtight container in the freezer for up to 2 months.
