For a richer flavor, use full-fat coconut milk. If you don't have shallots, you can substitute with half of a yellow onion, finely chopped. Feel free to add other vegetables to the curry, such as bell peppers, bamboo shoots, or eggplant. Adjust the amount of red curry paste to your spice preference. Chicken or shrimp can be substituted for the fish.
