Heat olive oil in a large skillet over medium heat. Add shallots and cook until softened and translucent, about 2 minutes.

Stir in red curry paste and cook for 1 minute, until fragrant.

Pour in coconut milk and chicken broth. Add sugar, salt, and pepper. Bring to a simmer, then reduce heat to low and cook until the curry has slightly thickened, about 10 minutes.

Season fish filets with salt and pepper. Carefully place the fish in the skillet with the curry sauce, spooning some sauce over the top. Cover the skillet and cook until the fish flakes easily with a fork and is cooked through, about 5 minutes.

Remove fish from the skillet and set aside.

Stir cilantro, green onions, and lime juice into the curry sauce. Taste and adjust seasonings if needed.

Serve the fish over rice, spooning the curry sauce over the top. Garnish with lime wedges.

For a richer flavor, use full-fat coconut milk.
If you don't have shallots, you can substitute with half of a yellow onion, finely chopped.
Feel free to add other vegetables to the curry, such as bell peppers, bamboo shoots, or eggplant.
Adjust the amount of red curry paste to your spice preference.
Chicken or shrimp can be substituted for the fish.
