Heat remaining 1 1/2 tablespoons sesame oil in a wok over medium-high heat. Stir in rice vinegar and chili-garlic sauce. Add chicken, minced garlic, and ginger. Stir-fry for 5 minutes. Mix in roasted vegetables. Sprinkle with bagel seasoning before serving. (10 minutes)

For an extra layer of flavor, marinate the chicken thighs in a mixture of soy sauce, ginger, and garlic for at least 30 minutes before stir-frying.
Adjust the amount of chili-garlic sauce to your preference. Start with a small amount and add more to taste.
If you don't have everything bagel seasoning, you can use a combination of sesame seeds, poppy seeds, dried garlic, dried onion, and salt.
