Follow The Directions

01

Step
10 mins

In a Dutch oven or stockpot, heat over medium-high heat. Add ground beef, red bell peppers, green onions, and garlic. Cook, stirring occasionally, until beef is browned and vegetables are softened (5-10 minutes). Drain excess grease.

02

Step
2 mins

Pour in water, diced tomatoes (undrained), tomato paste, and Italian seasoning. Season with salt and pepper to taste. Bring the mixture to a boil.

03

Step
10 mins

Stir in farfalle pasta. Reduce heat and simmer for 10 minutes, allowing the pasta to begin cooking.

04

Step
5 mins

Add frozen corn, frozen peas, and drained mushrooms. Continue to simmer, stirring occasionally, until the pasta is tender yet firm to the bite (about 5 more minutes).

For a richer flavor, brown the ground beef with a tablespoon of olive oil.
Adjust the amount of Italian seasoning to your liking. Fresh herbs like basil or oregano can also be added for an extra burst of flavor.
Feel free to substitute other vegetables, such as zucchini, carrots, or spinach, based on your preferences and what's in season.
If you prefer a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last few minutes of cooking.
Serve hot with a sprinkle of grated Parmesan cheese and crusty bread for dipping.
