Recipe View 5 mins Place farro, asparagus, tomatoes, walnuts, cranberries, parsley, and chives in a large bowl. Drizzle with balsamic vinaigrette and sprinkle with about 3/4 cup Parmesan cheese; toss until evenly mixed. Top with remaining 1/4 cup Parmesan cheese and serve at room temperature.

For a nut-free version, substitute sunflower seeds or pumpkin seeds for the walnuts.
If you don't have fresh chives, a pinch of dried chives or finely chopped scallions will work in a pinch.
Toasted walnuts add an extra layer of flavor. Toast them in a dry skillet over medium heat for a few minutes until fragrant, being careful not to burn them.

The farro took longer than 30 minutes to become tender. I'd suggest checking it after 20 minutes. Overall a great recipe!
