For an even chewier texture, try using a tangzhong method. Mix 1/4 cup of the flour with 1/2 cup of the milk from the recipe. Cook over medium-low heat, stirring constantly, until it forms a thick paste. Let cool slightly before adding to the rest of the ingredients. Don't overmix the dough! Overmixing can lead to a tough bread. If your kitchen is cold, you can place the dough in a slightly warmed oven (turned off!) to rise. This bread is best toasted and served with butter, jam, or cream cheese. It's also great for sandwiches.
