In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, alternating with the cold coffee, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix. (8 minutes)

Gently fold in the toasted pecans and plumped raisins until evenly distributed throughout the batter. (3 minutes)

Spread the batter evenly into the prepared baking pan. (2 minutes)

Bake in the preheated oven for 18-22 minutes, or until the edges are lightly browned and a toothpick inserted into the center comes out with moist crumbs. (20 minutes)

Let the bars cool completely in the pan before cutting into squares. (60 minutes)

For a richer flavor, try using dark brown sugar instead of light brown sugar.
To toast the pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant.
Plumping the raisins in warm water for 10 minutes will make them softer and more flavorful.
Store the cooled cookie bars in an airtight container at room temperature for up to 3 days.
