In a large bowl, whisk together the eggs, milk, salt, and pepper. Gradually whisk in 1 cup plus 2 tablespoons of flour, a little at a time, until the batter is completely smooth and lump-free. Let the batter rest for 10-15 minutes. (17 minutes)

Carefully remove the hot muffin tin from the oven. Add the lard (or beef dripping) to each of the 6 muffin cups, about 1 teaspoon per cup. Return the tin to the oven to heat the fat until it shimmers. (3 minutes)

Whisk the batter again vigorously until small bubbles form on the surface. Carefully remove the muffin tin from the oven and ladle the batter into the greased muffin cups, filling them almost to the top. (2 minutes)

Bake in the preheated oven until the puddings are well-risen, golden brown, and crispy around the edges, about 20-25 minutes. Avoid opening the oven door during baking. (25 minutes)

Resting the batter is crucial for achieving a light and airy texture.
Make sure the fat is smoking hot before adding the batter; this is key for the puddings to rise properly.
For extra flavor, use beef dripping instead of lard.
Do not open the oven while the puddings are baking or they may collapse.
