Follow The Directions

01

Step

Prepare the Egusi: Place pumpkin seeds in a blender; blend until mixture is powdery (30-40 seconds). Set aside.

02

Step

Season the Beef: Cut beef into bite-sized cubes; season with salt.

03

Step

Sear the Beef: Heat peanut oil in a large pot over medium-high heat. Cook beef in hot oil until browned but not cooked through (3-5 minutes).

04

Step

Blend Aromatics: Place tomatoes, onion, and habanero peppers in a blender; blend until smooth (about 30 seconds).

05

Step

Simmer Beef in Tomato Sauce: Stir tomato mixture into beef; reduce heat to medium-low and cover. Cook until meat is tender (40-50 minutes).

06

Step

Add Shrimp and Simmer: Add shrimp, tomato sauce, water, and tomato paste; simmer for 10 minutes.

07

Step

Finish with Spinach and Egusi: Stir in spinach and powdered seeds. Continue simmering for 10 more minutes, or until the spinach is wilted and the soup has thickened slightly.

For a richer flavor, use beef broth instead of water.
Adjust the amount of habanero peppers to control the spiciness. Scotch bonnet peppers are another traditional option.
If you can't find fresh spinach, frozen spinach can be substituted. Be sure to thaw and squeeze out any excess water before adding it to the soup.
Egusi seeds can be found in African grocery stores, or online.
