For a richer sauce, add a tablespoon of olive oil to the saucepan before simmering the tomato sauce. If you prefer a less crispy eggplant, skip the bread crumb coating and simply brush the eggplant slices with olive oil before baking. Fresh basil and oregano can be used instead of dried, just double the quantity.
