Prepare the Eggs: Heat 1 teaspoon of canola oil in a wok or large skillet over high heat. Add the beaten eggs and cook, stirring constantly, until scrambled and set, about 3-4 minutes. Transfer the cooked eggs to a plate and set aside. Clean the wok thoroughly.

Sauté the Vegetables: Return the wok to high heat. Add 1 tablespoon of canola oil, followed by the diced carrots and a pinch of salt. Stir-fry for 2 minutes, then add the minced garlic. Continue to cook until the garlic is fragrant and lightly browned, approximately 2 minutes. Add the frozen peas and sliced scallions; cook and stir until the peas are heated through, about 1-2 minutes. Reduce the heat to medium.

Combine and Finish: Add the cooked rice to the wok with the carrot mixture. Gently break up any clumps of rice and stir to combine. Incorporate the scrambled eggs, soy sauce, salt, and pepper. Cook, stirring frequently, until the entire mixture is heated through and the flavors have melded, around 2-3 minutes. Adjust seasoning to taste.

For best results, use day-old rice; it's drier and will fry up better without becoming mushy.
Feel free to add other vegetables like diced bell peppers, mushrooms, or bean sprouts.
A dash of sesame oil at the end can add a nutty aroma and flavor.
Adjust the amount of soy sauce according to your preference. Start with a little and add more to taste.
