In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, approximately 3 minutes.

Introduce the chopped cauliflower florets and vegetable broth to the saucepan. Cover with a lid and allow to simmer over medium heat until the cauliflower is fork-tender, about 5 minutes.

Carefully transfer the cauliflower mixture to a high-speed blender. Add the nutritional yeast, Himalayan salt, fresh lemon juice, and soy sauce.

Blend on high speed until the sauce is completely smooth and creamy, scraping down the sides as needed. This should take approximately 3 minutes. Adjust seasoning to taste.

For an even richer flavor, try roasting the cauliflower florets before adding them to the sauce.
If the sauce is too thick, add a splash more vegetable broth to reach your desired consistency.
A pinch of nutmeg can add a delightful warmth to the Alfredo sauce.
Store leftover sauce in an airtight container in the refrigerator for up to 3 days.
