Follow The Directions

01

Step
11 mins

Bring a large pot of lightly salted water to a vigorous boil. Add the spinach and three-cheese tortellini and cook, stirring occasionally, until the tortellini are tender yet firm to the bite and float to the surface, about 10-11 minutes.

02

Step
5 mins

Drain the tortellini thoroughly and rinse with cold water to stop the cooking process. Set aside to cool completely.

03

Step
3 mins

In a large bowl, combine the cooled tortellini with halved grape tomatoes, chopped marinated artichoke hearts, drained sliced black olives, thinly sliced red onion, and grated carrots.

04

Step
2 mins

Pour the oil and vinegar dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.

05

Step
12 hrs

Cover the bowl with plastic wrap and refrigerate for at least 3 hours, or preferably overnight, to allow the flavors to meld together.

For an extra layer of flavor, try adding a sprinkle of freshly grated Parmesan cheese before serving.
Feel free to customize the salad with your favorite vegetables, such as bell peppers, cucumbers, or zucchini.
If you don't have marinated artichoke hearts on hand, you can use plain artichoke hearts and add a splash of vinegar and a drizzle of olive oil to the dressing.
For a creamier salad, substitute some of the oil and vinegar dressing with a dollop of mayonnaise or Greek yogurt.
