Follow The Directions

Step

Preheat the oven to 375 degrees F (190 degrees C). (5 minutes)

In a blender, combine egg whites, eggs, and cottage cheese. Pulse until smooth, approximately 1 minute. Set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add asparagus and onion; cook, stirring occasionally, until the asparagus is tender, about 8 minutes. Remove from skillet and set aside.

Heat 2 teaspoons of olive oil in the same skillet over medium heat. Season shrimp with salt and pepper. Cook until pink and opaque, about 5-8 minutes.

Place pie crust into a 9-inch deep-dish pie plate. Spread shrimp evenly over the crust, then top with the asparagus mixture. Pour the cottage cheese mixture over the vegetables and shrimp. Sprinkle Monterey Jack cheese evenly over the top, followed by the chopped green onions.

Bake in the preheated oven until the cheese is lightly browned and the quiche is set in the center, approximately 1 hour.

For a richer flavor, substitute half-and-half or cream for some of the cottage cheese.
Feel free to experiment with different cheeses, such as Gruyere or Swiss, for a unique twist.
If the crust edges are browning too quickly, cover them with foil during the last 20 minutes of baking.
