In a large skillet over medium heat, melt clarified butter. Carefully place muffin disks into the skillet, working in batches to avoid overcrowding. Brown on both sides, flipping halfway through. (10-12 minutes) Continue to turn to ensure even browning and thorough cooking, then Transfer to a rack to cool completely (essential for splitting). (7-8 minutes per side)

Once cooled, split the muffins using a fork, inserting the tines around the edges to separate the halves. Toast and serve with your favorite jam.
