For a vegetarian version, omit the bacon and add 1 tablespoon of smoked paprika for a smoky flavor. If you prefer a richer flavor, use chicken broth instead of water. Add a splash of apple cider vinegar or hot sauce at the end for extra tang. Collard greens are even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
