Follow The Directions

01

Step
5 mins

Prepare the Grapefruit: Quarter the grapefruits and carefully separate the rinds from the fruit (reserve the fruit for juice or another recipe). Slice each rind lengthwise into strips, about 1/4 inch wide. (5 minutes)

02

Step
20 mins

Blanch the Rinds: Place the grapefruit rinds in a heavy-bottomed saucepan and cover with about 2 inches of fresh water. Bring to a boil over high heat, then boil for 3 minutes. Drain the water. Repeat this process three more times, using fresh water each time. This helps to remove excess bitterness. (20 minutes)

03

Step
1 hrs

Simmer in Sugar Syrup: Return the blanched grapefruit rinds to the saucepan. Add 1 3/4 cups of sugar and 1 cup of fresh water. Bring the mixture to a simmer over medium heat, then reduce the heat to low. Cook slowly, stirring occasionally, until the water is absorbed or evaporated and the rinds become translucent. This process may take about 1 hour, or longer depending on your stove. Be patient and monitor carefully to prevent burning.

04

Step
5 mins

Crystallize the Peels: Spread the remaining 1 cup of sugar in a large, shallow bowl. Add the cooked grapefruit peels and toss to coat them evenly with sugar. (5 minutes)

05

Step
2 hrs

Dry and Finish: Arrange the sugared peels in a single layer on wax paper or a wire rack. Allow them to cool and dry completely. This may take several hours or overnight. Once dry, dust with additional sugar if desired for a more intense sweetness and visual appeal. (120 minutes)

For a smoother texture, consider using a vegetable peeler to remove the very outer layer of the grapefruit peel before slicing into strips.
If you prefer a less bitter candied peel, blanch the rinds a fifth time.
Store the finished candied grapefruit peels in an airtight container at room temperature for up to several weeks, or in the refrigerator for longer storage.
Experiment with different sugars, such as brown sugar or demerara sugar, for a richer flavor profile.

I dipped half of the peels in dark chocolate as suggested – they were a huge hit!

This recipe worked perfectly! My candied grapefruit peels were beautiful and delicious. The blanching technique really helped to reduce the bitterness.

The simmering process took longer than an hour for me, but it was worth the wait. Be sure to keep an eye on it and adjust the heat as needed.

Next time, I'll try adding a pinch of sea salt to balance the sweetness.
