For best results, use very ripe bananas – the kind with lots of brown spots! They'll add the most sweetness and moisture. To toast the walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant. Watch them carefully, as they can burn easily. If you don't have oat flour, you can make your own by grinding rolled oats in a food processor until finely ground. Covering the bread loosely with foil during the last 15-20 minutes of baking can prevent the tops from getting too dark. The bread is even better the next day, after the flavors have had a chance to meld.
