Prepare the Brine: In a saucepan, combine the water, apple cider vinegar, and coarse salt. Bring the mixture to a boil, stirring until the salt is completely dissolved. (Cook time: 5 minutes). Remove from heat and allow the brine to cool slightly.

Jarring and Waiting: Carefully pour the vinegar mixture over the cucamelons in the jar, ensuring they are fully submerged. If needed, supplement with a mixture of equal parts water and vinegar to completely cover the contents. Seal the jar tightly with the lid and ring. Let the jar stand at room temperature for at least 3 to 4 days to allow the flavors to develop fully. For optimal flavor, wait a full 7 days. (Wait time: 3-7 days).

For a spicier kick, leave the seeds in the chile peppers.
Ensure the cucamelons are fully submerged in the brine to prevent spoilage.
Store the finished pickles in the refrigerator for up to one month.
Experiment with other herbs and spices like garlic cloves, coriander seeds, or bay leaves for a unique flavor profile.
