For a vegetarian option, simply omit the crawfish tails. This dish is equally delicious with just the fresh corn and vegetables.
If fresh corn is not available, you can use frozen corn kernels. Thaw the corn completely before adding it to the skillet.
Feel free to adjust the amount of cayenne pepper to your preference. If you prefer a milder flavor, reduce or omit the cayenne.
For an extra layer of flavor, consider adding a tablespoon of chopped fresh herbs such as parsley or thyme during the last few minutes of cooking.
If you don't have crawfish, shrimp or crab meat make a wonderful substitute.
