In a medium saucepan, combine the sugar and red wine. Bring the mixture to a boil over medium heat. (5 minutes)

Add the cranberries, orange zest, and cinnamon stick to the saucepan. Return to a boil, then reduce the heat to low. Simmer, stirring frequently, until most of the cranberries have burst and the relish has thickened slightly. (10-15 minutes)

Remove the relish from the heat and let it cool slightly. (10 minutes)

Transfer the relish to sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean with a damp paper towel.

Seal the jars with sterilized lids and rings, tightening the rings firmly. Once cooled, store the relish in the refrigerator. It will continue to thicken as it chills.

Let cool to room temperature before storing into the refrigerator.

For a deeper flavor, use a high-quality red wine. Avoid wines labeled "cooking wine," as these often contain added salt.
Adjust the amount of sugar to your preference. If you prefer a tart relish, reduce the sugar by 1/4 cup.
The relish will thicken as it cools. If it becomes too thick, you can add a tablespoon or two of water or red wine to loosen it up.
To sterilize jars and lids: Wash in hot, soapy water. Rinse well. Place jars on a baking sheet and heat in a 250°F (120°C) oven for 20 minutes. Place lids in simmering water for 10 minutes.
