Cool and check seals: Remove the jars from the stockpot and place them on a towel-lined surface, several inches apart. Let them cool undisturbed for 12-24 hours. As the jars cool, you should hear a popping sound as the lids seal. After 12-24 hours, test the seals by pressing the center of each lid. If the lid does not flex or move up and down, it is properly sealed. Remove the rings for storage (they can rust), and store the sealed jars in a cool, dark place. (Cooling time: 12-24 hours)
