While the biscuits are baking, prepare the ham. Add bacon grease to a cast-iron skillet over medium heat. (2 minutes)

Remove the ham from the skillet and place on a paper towel–lined plate to drain excess grease. Cut each slice in half. (2 minutes)

For extra flaky biscuits, ensure all ingredients (especially butter and buttermilk) are very cold.
Don't overmix the dough! Overmixing develops gluten, resulting in tougher biscuits.
If you don't have a biscuit cutter, you can use a sharp knife to cut the dough into squares.
For a sweeter biscuit, increase the sugar to 2 tablespoons.
Feel free to experiment with different types of ham, such as prosciutto or Black Forest ham.
