In a large nonstick skillet, melt the butter with 1 tablespoon of canola oil over medium heat. Add the finely chopped yellow onions and season with ¼ teaspoon of salt. Cook, stirring occasionally, until the onions become tender and develop a rich, golden-brown color, about 20 minutes. If the skillet starts to dry out, add water, 1 tablespoon at a time, stirring often until the onions are very soft, deeply browned, and jammy, approximately 10 to 15 minutes more. Be careful not to burn them. Remove from heat and set aside. (Cook time: 30-35 minutes)
