In a large bowl, combine rolled oats, coconut flakes, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together skim milk, softened coconut oil, beaten egg, and vanilla extract until well combined. (10 minutes)

Gently arrange ⅔ of the blueberries evenly across the bottom of the prepared baking dish. Spread the oat mixture uniformly over the blueberries. Pour the milk mixture carefully over the oat mixture, ensuring even distribution. Sprinkle the remaining ⅓ of the blueberries over the top. (5 minutes)

Bake in the preheated oven until the top is golden brown and the oatmeal is set, approximately 40 minutes. Let it cool for 5 minutes before serving. (45 minutes)

For a richer flavor, substitute full-fat coconut milk for skim milk.
Experiment with other fruits such as raspberries, peaches, or chopped apples.
Add a sprinkle of chopped nuts, such as pecans or walnuts, for added texture and flavor.
To prevent the top from browning too quickly, tent the baking dish with foil during the last 15 minutes of baking.
Baked oatmeal can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
